I always enjoy the unique scent of Greenfield Village: the Model Ts, the trains, the farms, flowers and horses. But I especially delight in the aromas that seem to lead me through the village during Fall Flavor Weekends. As activities in the village celebrate food and flavors – there’s the extra-added bonus of some really wonderful smells, too.
I followed my nose to the cooking demonstrations at seven of the historic homes. During the weekends, the homes display many prepared period dishes, and each has one featured recipe printed on a card for visitors to take home.
This recipe card at Firestone Farmhouse calls for smaller squash – but the ladies at the farm supersized it with a beautiful Hubbard squash. The farm kitchen feeds all the workers throughout the farming seasons – not just during the Fall Flavor Weekends, so the women who cook there are accustomed to making large meals.
My next stop was the Fall Farmers Market situated in the Pavilion. Plants, produce, dairy items, meat, soaps, syrups, candy, kettle corn, fibers, herbs, pies and much, much more filled the open-air building.

Doodle’s Sugarbush’s display had samples, samples and more samples. The Blanchard, Mich., maple syrup and confections’ company drew quite a crowd.
I didn’t know that a sugary tuberous root could be featured in so many delectable recipes until I read the product list for Detroit-based Sweet Potato Sensations.
There were handmade brooms, lovely and fragrant soaps, some charming little sculpted mushrooms and so many other curiosities and niceties to treat the senses.
After the market, I made my way around the village to see what else was cooking in the historic homes.
The presenters in small kitchen in the Adams Family Home were busy preparing the featured recipe for apple cake – following the same recipe card that visitors take home.
The 1800s recipe for the cake was published in a 1990 compilation: a reminder that good recipes stand the test of time.
Smothered pork was the featured fare at the Mattox Family Home. That recipe and the peach cobbler looked (and – no surprise - smelled) fantastic.
Next up was a walk to the Edison Homestead. The presenter there shared with guests the wonders of that (then) new kitchen staple: Crisco.
The featured recipe there is a bean soup. The presenter explained how the recipe would have been made in an 1800s kitchen, but also how the soup could easily be adapted using some of today’s convenience products – such as canned beans and tomatoes.
The Daggett Farmhouse is one of my favorite buildings in Greenfield Village. I love the simplicity of the 1750s house and the large fireplace in the center of the home.
This year’s featured recipe at the Daggett Farmhouse is a potato pudding. The rich but simple recipe is from The First American Cookbook, 1796.
After leaving the Daggett Farmhouse, I stopped by the Susquehanna Plantation to see what was cooking there.
The featured recipe is a baked shrimp dish, but when I was there, the ladies in the kitchen were working on dark baked biscuit, sharing with guests some of the challenges of baking over a fire.
I made my way back up to the Ford Home to see what was cooking and found a nice pumpkin fritter.
My last stop of the day was to get a closer look at the 1904 threshing machine in action. Ryan Spencer – the manager of Firestone Farm – shared some great details on the machine in a post last week.
A crowd gathered to see it in action. Next Saturday, visitors will get a chance to see some plowing with steam and horses.

If the Hat Fits...
If you watched any news over the weekend, you probably saw at least a few images of some spectacular hats - from the beautiful to the extreme. Fancy hats have long been a tradition - meant to bring good luck - at the Kentucky Derby.
You don't have to visit Kentucky to see some really stunning hats: Mrs. Cohen's Millinery in Greenfield Village has its share of beautiful one-of-a-kind headdresses right in Dearborn, Mich.
There's always something new to discover when you visit Mrs. Cohen's Millinery shop.
The store was built in Detroit in the 1880s and was run by Mrs. Elizabeth Cohen. She was a young widow who opened the shop to earn money after her husband’s death. She designed new hats and redecorated old ones. She also shared with her customers news about the latest fashions. She lived with her children on the second floor of the building.
The hats that are made and displayed now in the shop are representative of those made during the shop's operations in the mid 1890s.
The presenter at the shop showed off the lovely hat boxes and the display of hats that are for sale.
In years past, the hats made in the shop were sold at the Greenfield Village Store, but this year for the first time they are displayed and sold right from the millinery shop. Guests may choose a hat at the store where they'll receive a sales slip to take across the street for payment at the Emporium. When they present their receipt at the Mrs. Cohen's shop, they'll receive their hat, packaged in a lovely box.
The hats range in price from $40-$65. Girls' hats are $40 and women's hats are priced at $45, $55 and $65, depending on the embellishments. All of the hats are hand embellished at the shop by skilled craftswomen.
Although there isn't a record of what Mrs. Cohen charged for hats, an 1895 Montgomery Ward & Co. catalog lists ready-made trimmed hats ranging in price from $1.50-$5. (Montgomery Ward's prices were often less expensive than other catalogs at the time.)
If you're not purchasing a hat, there are many hats you can try just for fun. There are also some beautiful hats that are only for display.
There is a display at the shop of boys' hats that were typical for Sunday church-going. The hat this young visitor is wearing is a style that boys wore until they were about 10 years old.
Sorry to say, you're out of luck gentlemen - Mrs. Cohen's shop doesn't sell any hats for boys or men. But, there are some dapper hats for boys to try on for size.
Women of all classes (not just those going to the Kentucky Derby!) wore hats when they were outside. Some women may have only had one or two hats - one for everyday and one for church or special occasions - while wealthy women may have had many. Women of even modest means would buy trimmings or have someone like Elizabeth Cohen refresh their hat’s trimmings to fit current fashions.
Don't miss a stop at Mrs. Cohen's shop when you're in the neighborhood. You may find the perfect hat that's just your size, and if the hat fits ... buy it!

Cozying Up to a New Acquisition – Susan McCord Triple Irish Chain Quilt, circa 1900
People often send us letters offering items for our collection. Recently, I received a letter in the mail that surprised and absolutely delighted me.
Among the notable collections of The Henry Ford are 12 quilts made by an exceptionally talented, unassuming Indiana farm wife named Susan McCord (1829-1909). I opened the letter to find that the family of McCord’s great-grandson was offering us the opportunity to acquire one more: a Triple Irish Chain quilt made for her daughter, Millie McCord Canaday, about 1900.
It was the last remaining quilt known to have been made by Susan McCord. Soon after, this beauty was on its way to Dearborn to join the other 12 McCord quilts in The Henry Ford’s collection.
The Triple Irish Chain is a traditional quilt pattern — but in Susan McCord’s hands, this design became much more. Like all of her quilts, the Triple Irish Chain demonstrates McCord's considerable skill at manipulating fabric, color and design to turn a traditional quilt pattern into something extraordinary.
I could easily imagine Susan McCord carefully choosing fabric from her bag of scraps, cutting it into thousands of fabric squares, carefully determining their placement within the overall design and sewing the squares together. I could picture McCord then topping off this creation with her utterly unique, “signature” design — a stunning vine border, the leaves expertly pieced from tiny scraps of fabric. And it certainly wasn’t hard to imagine Millie McCord’s delight when she received this lovely gift!
To all who see Susan McCord’s quilts - whether experts or casual observers - the remarkable beauty and craftsmanship is evident. Now beautifully photographed, the story of this quilt can be readily accessed through our online collections – so that anyone, near or far, can enjoy McCord's quilt at the click of a mouse.

Car Talk: The Lakester

What do you get when you mix a war surplus fuel tank, an Oldsmobile engine, and a boatload of ingenuity? You get The Henry Ford’s latest automotive acquisition, the Lakester.
During World War II aircraft designers looking for ways to extend the range of fighter planes came up with the idea of hanging expendable auxiliary fuel tanks under the wings or fuselages of aircraft. These teardrop-shaped tanks could be jettisoned when they were empty. When Bill Burke, a California hot rodder serving in the Navy, saw some of these tanks on Guadalcanal, he thought they would make nifty bodies for streamlined racing cars. After the war, Burke put his idea into action.
Surplus drop tanks (also called wing tanks or belly tanks) were available for as little as $35. Burke squeezed an engine, driver’s seat, and running gear inside the tank, leaving the wheels and axles exposed. Burke raced the slick little car at El Mirage, a large, flat dry lake bed north of Los Angeles where hot rodders ran their vehicles in straight-away top speed runs against the clock. Other hot rodders soon copied Burke’s idea and over time the new cars came to be called “lakesters” because they were built to run at the dry lakes.

I have long wanted to add a lakester to The Henry Ford’s collection of race cars, because lakesters embody ingenuity and resourcefulness, and because they are peculiarly American. For years I have had my eye on one of the most successful and famous lakesters, a car built and driven by another California hot rodder, Tom Beatty. In 2009 the car came up for auction and we were finally able to acquire it.
Techno Talk Warning: The following paragraph is a technical description of Tom Beatty’s car for the benefit of “car geeks” (like the writer). If you are bored by discussions of chrome-moly tubing and swing axles, skip to the last paragraph.
Part of the attraction of Tom Beatty’s car is its sheer technical virtuosity. It looks like lots of other belly tank lakesters, but underneath the aluminum teardrop it is very different. Most lakester builders used a simple parallel rail frame, but Beatty welded up a complex space frame from chrome-moly steel tubing. It was stiffer and safer in an accident. Most lakesters ran without a rear suspension, but Beatty devised a swing axle independent rear suspension that helped the car maintain traction over the sometimes rough dry lake surface, or at the Bonneville Salt Flats.

Beatty was also one of the first hot rodders to experiment with supercharging, adapting GMC blowers to his flathead Ford engines. The car first ran at the 1951 Bonneville Speed Week, turning a top speed of 188.284 mph. Over the years Beatty kept improving the car, moving to supercharged Oldsmobile engines in 1959. By the time Beatty retired from racing after 1965 season, the lakester had gone 243.438 mph, and was the oldest car running at Bonneville.
As it sits on the floor of Henry Ford Museum, Tom Beatty’s car looks a little rough. The paint is chipped and the body is dinged. But it looks today much as it did the last time it ran in anger at Bonneville, and we will not restore it. We will do only what is necessary to preserve it. After all, you don’t mess with an American original.
